Sometimes I use raw potatoes and sometimes boiled potatoes. The preparation method is little different, but the taste is always amazing.

You can make it even simpler by opting out onions, and stir fry the potato cubes with any of your favorite spice or herb mixes. Fry Aloo Recipe

Fry Aloo Recipe is a Versatile Indian Side Dish made by Stir Frying the Potatoes with Flavorful Indian Spice Mix. It is a Quick Dish to serve with hot Indian Chapati.

Ingredients

  • 3 potatoes
  • 2 green chilies, fine chopped
  • Few fresh coriander leaves, fine chopped
  • 1/2 teaspoon red chili powder
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon cumin seeds powder (jeera powder)
  • 1/4 teaspoon garam masala powder
  • 1/4 teaspoon dry mango powder (amchur)
  • 1 tablespoon oil
  • Salt to taste

Instructions

  1. Peel the potatoes and chop in cubes.
  2. Put them in water to keep them fresh.
  3. Heat 1 tablespoon oil in a pan and add cubes of potatoes.
  4. Cook on low flame for about 3-4 minutes, till the potatoes tender little bit. Now when the potatoes are almost soft, remove the excess oil from it and again leave to cook for 2 more minutes.
  5. Add 2 fine chopped green chillies and salt to taste. Cover the pan, simmer the flame and cook it for 2 minutes.
  6. Now potatoes will turn little brown, crunchy and green chilies are also well cooked. At this moment, add 1/2 teaspoon red chili powder, 1/2 teaspoon turmeric powder, 1 teaspoon coriander powder, 1/2 teaspoon cumin seeds powder (jeera powder), 1/4 teaspoon garam masala powder and 1/4 teaspoon dry mango powder (amchur).
  7. Toss the potato cubes quickly by using two spatulas and coat it well with all spice mix.
  8. Again leave to cook for a couple of minutes on low flame and garnish with fine chopped coriander leaves.

Notes

If you want to make Fry Aloo in very less time, then another method is to use boiled potatoes. For that, you just need to peel the boiled potatoes and quickly stir fry with all spice mix. It can be made in less than 10 minutes. Fry Aloo can be served with Chapati, Poori, Dal and Rice.
