Potato Patties

Potato Patties or Aloo Tikki are the most popular snack dish in India, these patties are traditionally made with Boiled Potatoes and flavorful Spices. It’s a famous Chaat dish of road side vendors, where the aroma of the hot tikkis are enough to make you hungry.

In North India, these Potato Patties are generally served with Chole (spicy chickpea curry), garnished with onions, sweet Tamarind-Jaggery Chutney and hot Green Chutney made from green chillies and coriander.

The Potato Patties of North India are usually stuffed with the spiced filling of peas & paneer or chana dal, and hence I added boiled Chana Dal in my patties. Chana Dal helps in binding the patties, also gives a wonderful taste to them.Potato Patties

Aloo Patties can be served simply with Green Chutney and Bread Slices as an Evening Snack. I always add a binding agent while preparing Aloo Tikkis, it helps to keep the tikkis in shape and they do not crumble while frying. I always use different binding agents, such as corn starch, rice flour, bread crumbs and even arrow root flour as a binding agent on various occasions, all of them work well.

Potato Patties Recipe is simply made with boiled and mashed Potatoes, Chana dal and Spices. It is a famous Indian Snack Dish served with Coriander Chutney.

Ingredients

  • 4 medium size boiled potatoes
  • 2 tbsp boiled chana dal (bengal gram)
  • 4 fine chopped green chilies
  • 1/2 tsp red chili powder
  • 1/2 tsp turmeric powder
  • 1/4 tsp garam masala powder
  • 1/2 tsp chaat masala powder
  • 2 tablespoon bread crumbs
  • Fine chopped fresh coriander leaves
  • Oil for shallow frying
  • Salt to taste

Instructions

  1. Boil the chana dal and keep aside. Take a big bowl and mash the potatoes.
  2. Add boiled chana dal, 4 fine chopped green chilies, 1/2 tsp red chili powder, 1/2 tsp turmeric powder, 1/4 tsp garam masala powder, 1/2 tsp chaat masala powder, 2 tablespoon bread crumbs, fine chopped fresh coriander leaves and salt to taste.
  3. Mix all the ingredients very well and knead to make the patty dough. Divide it into small equal parts and make about 4 patties from the dough.
  4. Use the patty mould to give it a shape. I used heart shaped patty mould.
  5. Take one part of the potato dough, make a ball and flatten over the oiled palm and then fix it in a patty mould. Make all the patties in same way and keep aside.
  6. Heat the tawa or skillet on medium high heat and generously grease it with oil. Place the patties on the skillet, making sure they are not touching each other and has some space all around. Oil the patties from the top.
  7. Cook them for about 2-3 minutes and turn them over, patties should be light golden brown. Oil the patties from the top and lightly press with spatula.
  8. Turn the patties 3-4 times as needed to make sure that they are nice and crispy. Brush the oil lightly every time when you turn the patties over and also press with spatula.
  9. Aloo patties taste best when they are served right from over the skillet. Serve them hot.

Notes

You can prepare the raw patties in advance, and then cook or fry them just before serving. These patties can be served along with tamarind chutney, cilantro chutney and yogurt. You can also serve them with spicy chole.
