Vegetable Pulao Recipe


Vegetable Pulao Recipe is the flavorful Indian Rice Dish, cooked in combination of Vegetables and Basmati rice. This Indian Pulao is extremely tasty in eating and quick in making. Ingredients required for making Vegetable Pulao Recipe:

  • 1-1/2 cup rice (whole grained basmati rice)
  • 1 onion thinly chopped
  • 1 onion sliced
  • 1/2 cup fresh green peas
  • 1/2 carrot chopped
  • 1/2 cup cauliflower chopped
  • 1/2 cup fresh french beans chopped
  • 1 tbsp ghee or oil
  • 2 cups oil to deep fry
  • 1/2 tsp lemon juice
  • 4 green chillies chopped
  • 1 tbsp ginger-garlic paste
  • 1/2 tsp red chilli powder
  • 1/2 tsp turmeric powder
  • 1/2 tsp cumin seeds
  • 1/2 tsp mustard seeds
  • Few curry leaves
  • 1 tbsp coconut shredded
  • 1 bay leaf
  • 1 inch cinnamon stick (broken in bits)
  • 2 cloves
  • 1 black cardamom crushed
  • 2 green cardamoms crushed
  • 2-3 black peppercorns
  • Fresh coriander leaves chopped
  • 2 cubes processed cheese
  • Salt to taste

How to make Vegetable Pulao Recipe:

  1. Wash the rice thoroughly in normal water and soak them in 3 cups of water, keep aside.
  2. Heat oil in a non-stick pan and add whole garam masala. Saute for a few seconds and then add sliced vegetables. You may add some more veggies of your choice. Stir fry the vegetables on medium high flame and season with salt to taste.
  3. Saute for few seconds, until the nice aroma comes out. Add water of soaked rice. Mix and then add soaked rice as well.
  4. Cook the rice uncovered for 2-3 minutes. In between , stir and mix remaining spices and flavoring ingredients.
  5. Cover the pan, simmer the flame and leave the rice to get cooked. It will take about 7-8 minutes. Uncover and mix very gently.
  6. Serve this hot, yummy rice dish with vegetable raita or even you can serve it with any dal Recipe of your choice.
