Sindhi-Guar-Bhaji

Sindhi Guaar Bhaji is made with cluster beans (guaar) and flavorful spices. Guaar / Gawar is one green vegetable which can be cooked in different ways, you can boil it, make it in gravy or can cook along with the potatoes. Learn to make  quick and delicious guaar bhaji in typical Sindhi Style, as it is one of the most famous side dish of Sindhi Cuisine.Sindhi-Guar-Bhaji

Ingredients:

  • 250 gms cluster beans (guaar) finely chopped
  • 4-5 tomatoes finely chopped
  • 2 tsp garlic paste
  • 1 tsp ginger paste
  • 6-7 green chillies chopped
  • 1/2 tsp red chilli powder
  • 1/2 tsp turmeric powder
  • 2 tsp coriander powder
  • 1/2 tsp cumin (whole jeera)
  • 1/2 tsp mustard seeds
  • 1/2 tsp garam masala powder
  • 1/4 tsp dry mango powder
  • 1 tsp vegetable oil
  • Salt to taste

How to make Sindhi Guaar Bhaji:

  1. Wash the chopped guaar 2-3 times in normal water.
  2. Drain whole water and keep aside.
  3. Heat up the pressure cooker, add oil.
  4. Add cumin and mustard seeds and allow to crackle.
  5. Add green chillies and ginger-garlic paste, cook for 2 minutes on low flame.
  6. Add chopped tomatoes, salt, red chilli powder, turmeric powder and mix well.
  7. Cook for 3-4 minutes until nice color of tomatoes appear.
  8. Add guaar and coriander powder, saute for 2 minutes.
  9. Add 1 cup of water and garam masala powder, mix thoroughly.
  10. Cover the pressure cooker and wait for 4 whistles.
  11. Uncover and check the dryness of Subzi.
  12. Sindhi Guaar is a dry Subzi, add dry mango powder, mix well and put on low flame until water is fully evaporated.
  13. Serve hot with chapati or puri.Sindhi-Guar-Bhaji

Chef Tips:

  1. You can add onion if you want.
  2. You may cook the same style recipe of cluster beans with potatoes.
