Aloo Capsicum Dry Recipe is famous Punjabi Dish made with Aloo (Potatoes) and Capsicum (Shimla Mirch). It is a dry Indian Vegetable Recipe that has no liquids, and besides the capsicum and potatoes, I have used onion and tomato along with just a few Indian spice powders.

Aloo and Capsicum is one of the tastiest combination of dry Indian Vegetable and you can do lot of variations with it. However, this aloo capsicum recipe is an exception to the rule. I make this often and it is much relished recipe in my family. This is quickly made Dry Aloo Capsicum and I have used leftover boiled potato here. I like the whole flavor of onion and tomato in this dish, hence using diced one, but if you want, you can add finely chopped onion and tomato. You can even use raw potato instead of boiled potato, still the taste will be good. Aloo Capsicum Dry can be served as a side dish with hot Indian Chapati, Rice and Dal. Aloo Capsicum Dry Recipe

Aloo Capsicum Dry Recipe is a Dry Indian Vegetable cooked with Aloo and Capsicum. It has no liquids and can be served as a side dish with Chapati, Rice and Dal.

Ingredients

  • 1 medium boiled aloo (potato)
  • 250 gm capsicum (green bell pepper)
  • 1 onion
  • 1 tomato
  • 2 green chilies, finely chopped
  • 1/2 teaspoon red chili powder
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon coriander powder
  • 1/4 teaspoon cumin seeds powder
  • 1/4 teaspoon garam masala powder
  • 1 tablespoon +1/2 teaspoon oil
  • Salt to taste

Instructions

  1. Dice 1 boiled potato, 250 gm capsicum, 1 onion and 1 tomato in small cubes.
  2. Heat 1 tbsp oil in a pan and stir fry the diced capsicum in it.
  3. Take out the capsicum from pan, keep aside and now stir fry diced boiled potato in same oil. Drain fried potatoes as well and keep aside.
  4. Now you can do further cooking in same pan or heat another non-stick pan, because we have already stir fried aloo and capsicum, so now will be using very less oil. Heat 1/2 tsp of oil in a non-stick pan and throw 2 chopped green chilies in it. Quickly toss 1 diced onion and 1 diced tomato.
  5. After 1-2 minutes of cooking on low flame, add stir fried aloo and capsicum.
  6. Mix in 1/2 tsp red chili powder, 1/2 tsp turmeric powder, 1/2 tsp coriander powder, 1/4 tsp cumin seeds powder and 1/4 tsp garam masala powder.
  7. Toss the spices very well with aloo and capsicum and leave to cook for about 3-4 minutes on low flame.
  8. Keep stirring in between, so that aloo and capsicum turns crispy but not get burnt.
  9. Serve with Roti, Steamed Rice and Dal Fry.

Notes

You can do lot of variations with this Aloo Capsicum Dry Recipe, such as you may use raw potato instead of boiled potato. You can garnish this dish with some finely chopped coriander leaves. You can use finely chopped onion and tomato in this.

Chef Tip:

You can make this dish with baby potatoes as well. Baby potatoes and crunchy bell peppers make this dish subtle yet very tasty.
