Microwave Mutton Curry is the delicious and mouth-watering blend of boneless meat and spicy red gravy. This dish has the flavorsome of saffron and ghee, hence becomes more tasty even when served with long grained basmati rice, chapati or butter naan.microwave-mutton-curry

Preparation time: 6 minutes
Cooking time: 12 minutes
Servings: 5-6

Ingredients:

  • 500 gm boneless mutton cubes
  • 2 tbsp ginger-garlic paste
  • 4-5 green chillies chopped
  • 4 tbsp yogurt
  • 2 eggs boiled
  • A pinch of saffron
  • 2 tbsp milk
  • 2 tsp brown onions
  • 1/2 tsp red chilli powder
  • 1/4 tsp turmeric powder
  • 1-1/2 tsp coriander powder
  • 1/2 tsp lemon juice
  • 1 tbsp ghee
  • Salt to taste

Whole garam spices:

  • 1 mace
  • 1/2 tsp cumin seeds
  • 2-3 cinnamon bits
  • 1 bay leaf
  • 2 green cardamoms
  • 1 black cardamom
  • 2-3 black peppercorns
  • 2 cloves

For Garnishing you need:

  • Few chopped cashew nuts
  • Few chopped almonds
  • Few raisins
  • 1 tbsp Fresh mint leaves chopped
  • 1 tbsp fresh coriander leaves chopped

How to make Microwave Mutton Curry:

  1. Soak the saffron in a milk and set aside.
  2. Melt the ghee in a non-stick pan and add whole garam spices.
  3. Saute on low flame for few seconds and add ginger-garlic paste along with chopped green chillies.
  4. Saute for some more seconds and then add mutton, curd and saffron mixture.
  5. Transfer into the microwave proof bowl and microwave for 6 minutes on high.
  6. When the meat tenders then add salt and spices.
  7. Also add 1 cup of water and microwave for about 5 more minutes.
  8. Take out and sprinkle lemon juice along with the brown onions.
  9. Cut the boiled eggs in long halves and place on top of the dish.
  10. Finally garnish the dish with chopped nuts, mint and coriander leaves.
  11. Serve hot with roti or rice.

Chef Tips:

  • Microwave Chicken Curry can be made in the similar way.
