Ingredients:

  • 400gm small baingans (brinjals)
  • 1 tbsp ginger-garlic paste
  • 2 green chillies chopped
  • A pinch of sugar
  • 1/2 tsp lemon juice
  • 1/2 tsp ajwain (carom seeds)
  • 1/2 tsp red chilli powder
  • 1 tsp coriander powder
  • 3/4 tsp garam masala powder
  • 2 tsp cooking oil
  • Salt to taste

How to make Microwave Bharawan Baigan:

  1. Wash the brinjals thoroughly in normal tap water and slit them from any side.
  2. Combine the ginger-garlic paste, green chillies, salt, lemon juice, sugar and spices.
  3. Mix the spice mixture very well and fill in the brinjals.
  4. Heat the oil in a non-stick pan and arrange the brinjals at a proper distance.
  5. Stir fry them for few minutes over moderate heat.
  6. When the brinjals looks slightly done then place them in microwave serving dish.
  7. Sprinkle few drops of water and microwave on medium for about 10 minutes.
  8. Serve hot with Fresh Indian chapati/roti.

Chef Tips:

  • Microwave Bharawan Baigan can be cooked in the non-stick pan/griddle or even directly on the stove. It may take maximum 20 minutes to get cooked.
