Black Dal

Black Dal is a creamy and tempting dal recipe which has various flavors and buttery fragrance. It is one of the most interesting and unique recipes. This dal is perfect to fill the hungry and desperate stomach to eat. This dal is the most famous dish of Punjabi Cuisine because of its rich and creamy flavor.Black Dal

Preparation time: 10 minutes
Cooking time: 20-30 minutes
Servings: 4-5 persons


  • 1 cup Urad dal (split black lentil)
  • 1/6 cup Channa dal
  • 1/6 cup rajma (red kidney beans)
  • 2 small onions finely chopped
  • 3 tomatoes finely chopped
  • 2 tsp ginger-garlic paste
  • 1 tsp red chilli powder
  • 1/2 tsp turmeric powder
  • 1-1/2 tsp coriander powder
  • 1 tsp garam masala powder
  • 1 tsp ghee
  • 1/2 tsp cumin seeds
  • 1/2 tsp fenugreek (methi) seeds
  • 1/2 tsp mustard seeds ( rai / sarson)
  • 4-5 curry leaves (kadi patta)
  • 2 tbsp butter
  • 1 cup fresh cream
  • Salt to taste

How to make Black Dal:

  1. Soak all the dals in the water for overnight.
  2. Next morning heat a pressure cooker, add the soaked dal along with its water.
  3. Add water if require to boil.
  4. Leave to cook for about 20 minutes (pressure cook for 6-8 whistles).
  5. Allow the steam to escape before opening the pressure cooker lid.
  6. In a pan add ghee. Immediately add ginger-garlic paste and saute.
  7. Add onion and salt.
  8. Cook until onion turns into golden brown color.
  9. Add tomatoes, red chilli powder, turmeric powder, coriander powder and garam masala powder.
  10. Mix well and cook for 2-3 minutes.
  11. Add this mixture to the boiling dal and mix thoroughly.
  12. Now melt the butter in a sauce pan and add curry leaves, cumin, mustard and fenugreek seeds.
  13. Continue stir and allow little bit crackling.
  14. Pour this tempering over the dal and add fresh cream.
  15. Mix well and leave for 1 minute.
  16. Garnish with fresh cilantro and serve hot with roti or jeera rice.

Chef Tips:

  1. Sometimes I mix only urad dal and rajma, then too it tastes yummy. You should try this.
  2. Mix the crackling seeds in the end at the time of tempering, it enhance the flavors in dal.
  3. You can grind the onion and tomatoes, make a gravy and then mix the boiled dal. Then too it will be very tasty.
  4. Sometimes try mixing urad dal with soya chunks.
  5. You may use butter milk instead of fresh cream.
