Achari Baingan are the small baby brinjals cooked in onion, seeds and spices. The dish becomes more tasty when gets the flavor of yogurt. Baingan in Achari Masala can be served with rice and dal or simply with Indian chapati / roti. It is always tasty and easy in making.

Cooking time: 10 minutes
Servings: 4

Ingredients:

  • 4 Brinjals / Baingan (vertical pieces)
  • 1 potato / Aloo, cut into long pieces
  • 1 big onion chopped
  • 2 tbsp curd
  • 1/2 tsp cumin seeds
  • 4-5 curry leaves
  • 4 green chillies sliced
  • 1/4 tsp mustard seeds
  • 1/2 tsp fenugreek seeds
  • 1/2 tsp fennel seeds
  • 1/2 tsp red chilli powder
  • 1/2 tsp turmeric powder
  • 1-1/2 tsp coriander powder
  • 1/2 tsp garam masala powder
  • 1/4 tsp dry mango powder
  • 2 tbsp oil
  • Salt to taste

How to make Achari Baingan:

  1. Heat the oil in a pan.
  2. Add all the seeds along with curry leaves.
  3. Saute for few seconds.
  4. Add green chillies. Fry for 2-3 seconds.
  5. Add onion and saute until onion turns soft.
  6. Add pieces of brinjals along with pieces of potatoes. Mix in salt and cover the pan. Leave to cook for about few minutes, till it tenders.
  7. Uncover and add curd. Season with spices and mix very well.
  8. Cook for one more minute and serve with hot Indian chapati / roti.

Chef Tips:

  1. Adding potato in this dish is optional, you can cook only brinjals with achari masala.
  2. You can add water if you like to have some gravy in it.
  3. This recipe needs a simmer flame to cook and for tenderness.
  4. You may roast the seeds, make the powder and add in the dish. It will bring more aroma and flavor.
