White Pumpkin Kootu

White Pumpkin Kootu is the unique dish made with kadhu (pumpkin) and flavorful spices. A best dish, blended in fresh coconut is the specialty from the Southern part of India and is quite amazing when served with hot Indian roti.White Pumpkin Kootu

Preparation time: 10-12 minutes

Servings: 2-3

Ingredients:

  • 4 cups white pumpkin (kadhu)
  • 1 cup fresh coconut (nariyal) scraped
  • 1 tsp white sesame seeds
  • 1 tbsp cumin seeds
  • A pinch of asofoetida (hing)
  • 4 green chillies finely chopped
  • 2-3 whole Kashmiri Red chillies
  • 4-5 black peppercorns
  • 1/2 tsp turmeric powder
  • 1-1/2 tsp black gram split (urad dal)
  • 2 tsp rice (chawal)

How to make White Pumpkin Kootu:

  1. Chop the pumpkin into small pieces and keep aside.
  2. Heat 4 cups of water, add salt, turmeric powder, asafoetida and chopped pumpkin.
  3. Stir altogether for 3-4 minutes.
  4. Meanwhile, combine all other ingredients and blend to make a smooth paste.
  5. When the pumpkin mixture thickened, add the prepared spices paste.
  6. Simmer for 3-4 more minutes until it thickens by stirring frequently.
  7. Serve hot with roti or jeera rice.
