It is a filling Sunday Breakfast, that can be served with Chole or Chickpea in Gravy. You can see the vendors selling Chole Bhature in Mumbai, but this Paneer Stuffed Bhatura Recipe is rarely seen in some shops and restaurants, hence I thought to give it a try at home.

Paneer Stuffed BhaturaIt is very important that paneer should be fresh for making this bhatoora and while rolling out this Bhatura, the edges should be thin, so that your Bhatura can puff up nicely. This Bhatura is also made from All Purpose Flour (Maida) and Yogurt (Curd), only the difference is that we are stuffing it with Paneer and you can add some of your favorite spices in paneer for making it more flavorful. Following are the ingredients that we require for making Paneer Stuffed Bhatura. All Purpose Flour, Semolina, Yogurt and Baking Soda.Paneer-Stuffed-Bhatura-Recipe-Ingredients Grate or Crumble the Paneer in a separate plate or bowl.Paneer Stuffed Bhatura Recipe Step1 Mix 2 fine chopped Green Chilies, 1/2 teaspoon Garam Masala Powder, few fresh finely chopped Coriander Leaves and Salt to Taste in grated paneer and keep it aside. Paneer Stuffed Bhatura Recipe Step2Take a big bowl and mix the Flour, Semolina, Baking soda, Sugar, Yogurt, 1 tablespoon oil and Salt to Taste. Mix the contents properly with your hands.

Paneer Stuffed Bhatura Recipe

Paneer Stuffed Bhatura Recipe is the popular Punjabi Breakfast made with Maida and Yogurt and stuffed with the spicy and tasty filling of Paneer.

Ingredients

  • 2 cups maida (all purpose flour)
  • 1/2 cup suji (semolina / rava)
  • 1 teaspoon baking powder or baking soda
  • 1/2 teaspoon sugar
  • 1/2 cup fresh yogurt (curd / dahi)
  • 1 cup paneer (Indian cottage cheese)
  • 2 green chilies, finely chopped
  • 1/2 teaspoon garam masala powder
  • Few fresh coriander leaves, finely chopped
  • Salt to taste
  • Oil for frying
  • 1/2 cup warm water

Instructions

  1. Sift the suji and maida separately and then mix them in a big utensil or bowl.
  2. Make a crater in the flour and add 1 teaspoon baking powder or baking soda, 1/2 teaspoon sugar, 1/2 cup fresh yogurt (curd / dahi), 1 tablespoon oil and salt to taste. Mix the contents properly with your hands. Using warm water knead a soft dough. Cover the dough and keep aside for 2-3 hours, if you are in a hurry then keep for 30-45 minutes at warm place. This ferments the dough.
  3. Now for making paneer ki pitthi or paneer stuffing, you need to grate or mash the paneer in any bowl and mix in 2 fine chopped green chilies, 1/2 teaspoon garam masala powder, few fresh finely chopped coriander leaves and salt to taste.
  4. Mix all the ingredients very well and your Paneer stuffing is ready to be filled in the Bhatura.
  5. Now take the dough out from warm place and make about 12-15 small lemon sized balls from it.
  6. Heat good amount of oil in a pan, take one ball of dough, expand it by pressing with your hand. Make a little depth with your fingers and place 1 or 1/-1/2 spoon of paneer stuffing in it. Wrap up this piece of dough and close it on all sides. Gently press the stuffed ball as you expand it then put it on a board and with a rolling pin flatten into an oval or round shape. Roll it a bit thick, you can also apply dry flour to the stuffed ball and then flatten.
  7. The oil in the pan must have heated, check to see if it has (put a small piece of dough in it. If the oil is hot then the piece will rise up to the surface else it will sink). Drop the rolled Bhatura in hot oil, press with frying ladle to make it puffy. Fry till Bhatura turns light brown and then keep it on a plate covered with a paper napkin. Similarly fry all the Bhaturas and keep them on the plate.

Notes

Since this bhatura is stuffed with the filling of paneer, hence it can be eaten as it is without any accompaniment. You can add chaat masala powder in this bhatura.
