Mixed Vegetable Handi

Mixed Vegetable Handi Recipe is one of the famous North Indian delicacy cooked with lot of Vegetables and Paneer. Cauliflower, Carrot, Capsicum, Beans, Green Peas and Paneer (Indian Cottage Cheese) are cooked in onion and tomato based gravy and flavored with fresh spices. It is considered as a Royal Dish of Punjabi Cuisine.

Mixed Vegetable Handi is generally served as a side dish with hot Indian Roti (chapati). You can see variety of vegetable recipes in my blog, but this recipe is my experiment with vegetables to explore a new taste, and after cooking it I personally feel that Mix Vegetable Handi is a rich and versatile dish that makes a decent serving with roti and Paratha.

In restaurants, Mixed Vegetable Handi is generally served in Indian Round Shaped Pot, called as ‘Handi‘. Since I didn’t get it to serve my dish, so I served it in a serving bowl.

Ingredients required for making Mixed Vegetable HandiCombine the chopped Tomatoes, Ginger, Garlic and Green Chilies in a Blending Jar.Mixed Vegetable Handi Recipe- Step1Heat 1 tablespoon oil in a pan and stir fry the sliced Onion on a medium high flame.Mixed Vegetable Handi Recipe- Step2Fry till the Onion turns brown in color and then allow it to cool aside.Mixed Vegetable Handi Recipe- Step3Mix fried Onion in the mixture of Tomatoes, Ginger, Garlic and Green Chilies.  Mixed Vegetable Handi Recipe

Mixed Vegetable Handi Recipe is a famous Punjabi Recipe cooked with lot of Vegetables and Paneer. Cauliflower, Carrot, Capsicum, Beans, Green Peas and Paneer (Indian Cottage Cheese) are cooked in Onion and Tomato based Gravy and flavored with Fresh Spices.

Ingredients

  • 1/2 cup cauliflower, chopped
  • 1/2 cup green peas (fresh or frozen)
  • 1 capsicum, finely chopped
  • 1/2 cup carrot, chopped
  • 1 cup french beans, chopped
  • 1 cup paneer pieces
  • 1 medium onion, sliced
  • 4 tomatoes, roughly chopped
  • 1 inch ginger piece
  • 4 pods of garlic
  • 2 green chilies
  • 1 tablespoon dried fenugreek leaves (kasuri methi)
  • 1/2 tablespoon fresh cream
  • 1 teaspoon butter
  • 1/2 teaspoon red chilli powder
  • 3/4 teaspoon coriander powder
  • 3/4 teaspoon garam masala powder
  • 1/2 teaspoon lemon juice
  • Few coriander leaves, finely chopped
  • 1-1/2 tablespoon oil
  • Salt to taste

Instructions

  1. Arrange all the chopped vegetables in a plate, also slice the onion in thin pieces. Heat 1 tablespoon of oil in a pan and stir fry the sliced onion.
  2. When the onion is little browned and translucent, remove from oil, cool down and grind with tomatoes, ginger, garlic and green chillies.
  3. Reheat the same pan and now add 1/2 tablespoon of oil. When the oil is medium hot then add prepared tomato puree. Cook on a low flame for 2-3 minutes, till you get a nice color of gravy.
  4. Add about 1 teaspoon of butter and mix very well for a few seconds.
  5. Add 1/2 teaspoon red chili powder, 3/4 teaspoon coriander powder, 3/4 teaspoon garam masala powder, crushed kasuri methi and salt to taste.
  6. Add chopped cauliflower, carrot, capsicum, french beans and green peas. (Do not mix in paneer at this moment).
  7. Cover the pan with its lid, simmer the flame and leave to cook for 5-6 minutes, till the vegetables tender. Now mix in cubed paneer along with fresh cream and sprinkle lemon juice all over. You need to mix it very gently at this stage, so that paneer pieces should not break.
  8. Cook for few more minutes. Garnish with finely chopped coriander and serve hot.

Notes

Some other vegetables such as pumpkin, potato and drumsticks also can be added in this dish. You can garnish the dish with blanched cashew nuts.

Chef Tips:

  1. You can add dry mango powder (Amchur), instead of lemon juice.
  2. Cabbage and broccoli can be added into this.
